"Buffalo are the second largest source of milk supply. Of the 38.5
million tons of world milk production, India produces 23.6 million and Pakistan
10.5 million tons (FAO 1991, Table 6.1). While the world cattle population over
the last 18 years has risen by less than one per cent per year, the buffalo
population has gone up by two per cent per year, with higher rises in India (3.5
per cent), Pakistan (5.4 per cent), China (3.7 per cent), Vietnam (4.8 per cent)
and Nepal (2.0 per cent). The higher population growth rate of buffalo can be
attributed to better conversion efficiency compared to the local cattle.
Ninety-five per cent of India's milk is produced from bovine diets based on crop
residues like wheat straw, paddy straw, maize and millet stovers, supplemented
with concentrates made out of agricultural by-products such as, oil cakes, rice
polish and molasses. In India buffalo account for 33 per cent of the milk animal
population and 45 per cent of milk."(1)

Water buffalo have been responsible for more than ten
percent of world milk production for several years, but the potential of these
animals has seldom been appreciated or recognized. One of the main reasons for
this is that those who have a stake in rearing buffalo are generally poor and
underprivileged, and not able to project the impact this beast has on their
livelihood and well-being.
The word "buffalo" evokes a mixed response in
North America, a large section of Europe, and in many other parts of the world
where buffalo have never been considered a domesticated species. This animal has
been identified as a zoo animal or a wild beast. However it is among the most
gentle of the domesticated dairy species, which is obvious in lndia and the
sub-continent where it is common to see small children handling large herds of
buffalo.
Over time buffalo rearing has shifted from the backyard to
commercial farms and large business enterprises. The immense popularity of
buffalo milk and meat products has ensured that buffalo production has followed
in the path of the dairy cattle industry. However for this species to perform
optimally under the pressure of intensive production systems, buffalo breeds
have to be improved, with clear focus on the desired output. This has not yet
happened. Buffalo, although potentially excellent for both milk and meat
production, still languish in obscure conditions of poor nutrition, breeding,
management and welfare.
Buffalo Milk Yields for Cheese:
Yield: With fresh buffalo milk with a FAT 8.3% and 4.3% of
proteins, you get an average of 24.6%. I.e. from the processing of 1 quintal of
buffalo milk gets over 24 Kg of mozzarella, against 13 Kg obtained an average of
1 quintal of milk. Buffalo milk yield is, in this case, in excess of
approximately 1.8 times that of cows ' milk. To get a pound of mozzarella di
bufala serve approximately 4 and a half litres of milk.

As you can see from the chart, buffalo milk has 58%
more calcium, 40% more protein, and 43% less cholesterol than cow's
milk.
Buffalo milk is a totally natural product
that can be consumed like any other milk. Time after time participants in
tasting trials pick out buffalo milk in preference to cows, goats and
artificially manufactured milks. They just love the taste.

Buffalo milk is very white and
beautifully smooth. It is significantly lower in cholesterol and higher in
calcium than cows, sheep or goats milks. And unlike the array of industrially
produced soya and other cereal milks it is totally free of additives and
chemical formulations.
In addition to the significant cholesterol
and calcium benefits Buffalo Milk is also a rich source of iron,
phosphorus, vitamin A and of course protein.
Buffalo Milk also contains high levels
of the natural antioxidant tocopherol. Peroxidate activity is normally
2-4 times that of cows milk.
An unfortunate sign of the times is the
growing number of people who suffer from cows milk allergy (cma).

suffers from cma*.
The high milk solids of Buffalo Milk not
only make it ideal for processing into superb dairy products but also contribute
to significant energy savings in conducting that process. Yogurts are
natural thick set without recourse to adding addition milk proteins or gelling
agents as with lesser milks.
Unlike the modern dairy cow the buffalo can
thrive without the need to use high levels of concentrated feed. Grass,
clover and straw make up the bulk of a buffaloes diet. No bone meals, fish
meals or genetically modified feeds are ever fed to our buffalo.
And for those concerned about BSE; buffalo
are a genetically pure species with no BSE or scrapie.

Water Buffalo Co-Operative. The milk is packed in Tetrapak 250 ml prisma
cartons complete with a drinking straw attached. The 250 ml size is ideal for

"The high-yielding Murrah
is the Holstein-Friesian
of the buffalo world. There is no reason why the Murrah and other riverine
breeds should not exceed the volumetric yield of the best milk cows. Buffalo
milk contains about twice as much butterfat as cow milk. There is no
physiological need for concentrate feed to maintain this level. When
concentrates are fed, the fat content rises. When fed ad lib, it can exceed 15
per cent. Fed to excess, this figure can be much higher. The
buffalo, in fact, releases unwanted fat in the milk and stores only a minimum in
the body tissues."
